This is a lighter meal that’s perfect in the spring and summer time. The crunch of the Italian salad is refreshing and can be arranged ahead. With this menu you’ll transport your special guest to a small seaside trattoria. Put on an Italian movie score, pour your guest a nice Pinot Grigio while you expertly sauté scallops with brown butter.

Opening Course

I like this green Mediterranean as an opener because it allows you to prepare the lettuce and vegetables earlier in the day and then assemble it an hour before dinner. I like to plate it up an hour before and put in the fridge so that serving it easy.
