This is a lighter meal that’s perfect in the spring and summer time. The crunch of the Italian salad is refreshing and can be arranged ahead. The risotto is fun to make and will make the meal memorable. But the scallops with a wonderful golden crust will make your reputation as an excellent home cook.
With this menu you’ll transport your special guest to a small seaside trattoria. Put on an Italian movie score, pour your guest a nice Pinot Grigio while you expertly sauté scallops with brown butter.
I like this green Mediterranean as an opener because it allows you to prepare the lettuce and vegetables earlier in the day and then assemble it an hour before dinner. I like to plate it up an hour before and put in the fridge so that serving it easy.
